At Elegant Fine Food, caviar is not so much a garnish as it is the main event. This intimate restaurant in Tropicana serves as a platform to showcase the multilayered artistry behind this luxury ingredient.
It was around 2018 that the founders of Elegant Fine Caviar, Dr. Rainey Yan and Aaron Tong, first identified a gap in the caviar market. This gap was characterised by inconsistent supply chains, borne of sheer scarcity. Caviar was increasingly difficult to source, and this shortage was making itself felt in the restaurant industry. This realisation formed the catalyst for the enterprising duo to invest in a boutique Chinese caviar farm, with the goal of producing eggs worthy of decorating fine dining’s most coveted tables.

All good things take time, though, and this is especially true of something as finicky as caviar. In the meantime, while waiting for the seeds of their vision—and the sturgeon eggs growing in the farm—to mature, Dr. Rainey and Aaron decided that what better way to showcase their caviar than to open their own restaurant, where it would be the star of the show? And so it was that Elegant Fine Food came into being.

Since its opening in 2022, the restaurant has established itself as something of a hidden gem in the Tropicana area. Numbering just 20 seats in total, dining here is an intimate experience to say the least. The restaurant marries Japanese culinary philosophy with the refinement of French haute cuisine, the two traditions dovetailing perfectly to form the bedrock on which the caviar shines. And, oh, does it ever shine.
The Elegant Fine Food premises take an understated approach in their décor. Soft lighting, gold-trimmed cutlery, and discreet service ensure that the spotlight remains firmly fixed on the food. You get the sense that everything here is meticulously laid out so as to enhance the culinary experience, as opposed to intruding upon it.

The focus at Elegant Fine Food is clear as day—it’s all about the caviar here. All too often relegated to the status of mere garnishing or luxury topping in other restaurants, caviar is instead the very centrepiece of Elegant Fine Food’s menu. Embracing both the classic and the avant-garde in its treatment of this delicacy, dishes like the cold capellini form a showcase for these oceanic jewels, as does the buttery-rich foie gras with scallop. Make no mistake: here, the tiny, glistening pearls, far from being just an embellishment, are treated as an integral part of the dining experience.
For diners who will have inevitably developed an entrancing fascination with caviar after just one meal here, Elegant Fine Food offers the opportunity to delve deeper into the world of these silken pearls of the deep. The restaurant regularly organises a range of masterclasses and workshops to allow curious diners to expand their palates and deepen their understanding of this delicacy. At Elegant Fine Food, caviar is accorded a different kind of respect, elevated so much as to become an art form almost in and of itself.
