Men Who Cook: Andrew’s Sataráš Bruschetta

A fitness coach with Balkan roots, Andrew swaps the gym floor for the kitchen to serve up a rustic Sataráš Bruschetta, inspired by childhood flavours.

Serbian-born, Aussie-bred, and now KL-based, Andrew is the founder of a local fitness studio—and a believer in balance, which for him includes getting hands-on in the kitchen. For Men Who Cook, he shares his recipe for ‘Sataráš Bruschetta’: a Balkan-style veggie medley on toast, inspired by the flavours of his childhood.

Method for Sataráš:

Sauté onions and garlic in olive oil until soft. Add diced capsicum and eggplant, cook until tender. Stir in both fresh and canned tomatoes. Season well with salt. Let the mixture simmer until thick and jammy. Sprinkle with parsley. Spoon warm sataráš onto toasted sourdough, then top with crumbled feta, marinated chillies, and sardines for a savoury finish.

Ingredients and method for marinated chillis:

Roast chilli peppers of choice in an air fryer for 10 minutes (while prepping Sataráš). While hot, place in a bag to naturally steam for 15 minutes. Then, peel off the skin, lay flat in a serving dish, and douse in olive oil and a splash of vinegar. Garnish with garlic.

Rustic, hearty, and quietly impressive—just like the man himself.
