A Closer Look At Toki Suntory Whisky With Darwin Ng

We chat with House of Suntory Brand Ambassador Darwin Ng about what makes Toki Suntory Whisky tick, from the three distilleries that go into the blend to why this particular Japanese whisky might be better suited to a highball than a serious-looking glass and a furrowed brow.

When it comes to whisky, Malaysians have traditionally been rather fond of their Scotch, and there’s nothing particularly wrong with that. But if you’ve spent enough time around the drinks scene here, you’ll know that Japanese whisky has been steadily carving out a place for itself too.

Now, with the introduction of Toki Suntory Whisky, there’s another bottle for local drinkers to get acquainted with, particularly if highballs happen to be your thing. We caught up with Darwin Ng, House of Suntory Brand Ambassador for Malaysia, to talk about what goes into the blend, how it compares to the whiskies we’re more accustomed to, and why Toki might be worth approaching a little differently.

1. When you’re introducing someone to Toki Suntory Whisky, how do you explain the distinct personalities that Hakushu, Yamazaki, and Chita bring to the bottle?

Toki Suntory Whisky is an authentic Japanese blended whisky that brings together the distinct personalities of three iconic House of Suntory distilleries, each contributing something unique to the final expression.

Hakushu, our forest distillery, introduces bright orchard fruit notes such as green apple and melon, bringing freshness and vibrancy to the blend. Yamazaki, the birthplace of Japanese whisky, adds depth, complexity, and sherry spice, while Chita, our single grain distillery, provides texture, structure, and a smooth, refined mouthfeel.

Individually, each whisky has its own identity. Together, they create a harmonious blend that reflects the House of Suntory’s philosophy of crafting whiskies that are subtle, refined, yet complex, where every component plays a purposeful role in achieving balance.

2. Over here, the preference has generally been for Scotch and traditional drams. What kind of reaction have you gotten from local whisky traditionalists who first tried Toki Suntory Whisky?

Many whisky drinkers in Malaysia naturally approach Japanese whisky with expectations shaped by Scotch, particularly because both categories share similar foundations in traditional whisky-making.

What often surprises them about Toki Suntory Whisky is its lighter, brighter character. Rather than relying on intensity, it reveals its complexity through balance, allowing each layer of flavour to unfold with clarity without overwhelming the palate.

Once consumers understand the philosophy behind Toki Suntory Whisky, particularly the intention behind its blend and the House of Suntory’s pursuit of harmony, they begin to appreciate that complexity isn’t always defined by its intensity. Sometimes it comes through precision, balance, and restraint.

3. Describe what Toki Suntory Whisky is like using a non-whisky metaphor. You can use architecture, a song, a specific moment in the day, or a kind of person—anything you like.

If Toki Suntory Whisky were a person, I’d imagine someone with quiet confidence. They have a contemporary sense of style, clean lines, relaxed tailoring, and a subtle pop of colour, much like Toki’s bright orchard fruit notes. They never seek to be the centre of attention, yet naturally leave a lasting impression.

Above all, they have a deep respect for tradition while embracing the present. They honour where they came from while continuing to evolve, which perfectly reflects Toki Suntory Whisky’s philosophy of where tradition meets innovation.

They’re warm, approachable, and easy to be around. Never loud or overpowering, they connect with people through authenticity and genuine curiosity. They’re just as comfortable enjoying a quiet moment on their own as they are bringing people together in a lively gathering. Adaptable by nature, they fit effortlessly into different occasions without ever losing who they are.

4. Are there other ways you personally like to enjoy Toki Suntory Whisky besides having it in a highball?

Toki Suntory Whisky is incredibly versatile and can be enjoyed in many different ways depending on the occasion. One of my personal favourites is a Mizuwari, a simple serve of one part whisky to two parts water over ice. It gently lowers the alcohol strength while allowing Toki’s bright, vibrant character to shine through.

Because Mizuwari contains only three ingredients – whisky, ice, and water, and each one plays an equally important role. The quality of the water, in particular, can either enhance the whisky’s delicate flavours or mask them entirely. That’s why I always recommend using soft water, as it preserves Toki’s subtle, refined, yet complex character and creates a much more enjoyable drinking experience.

To add a unique twist, I like to finish it with a small 5ml float of frozen Toki Suntory Whisky. The chilled whisky creates a silky texture, and because it’s served at such a low temperature, the first sip delivers a concentrated burst of bright orchard fruit notes before gradually integrating into the Mizuwari. It’s a simple technique, but one that adds another layer of texture and flavour to the experience.

5. If we’re talking about pairing Toki with Malaysian food, what do you think would work?

Malaysia’s multicultural food culture offers an incredible range of flavours, from light and delicate to rich, bold, and spicy. Toki Suntory Whisky, with its bright orchard fruit notes, silky mouthfeel, and subtle hints of spice and gentle smoke, pairs best with dishes that complement rather than overpower its character.

One of my favourite pairings is roasted chicken rice, a Malaysian classic. The fragrant rice and fresh cucumber highlight Toki’s vibrant fruit profile, while the crispy roasted chicken skin complements its gentle spice and delicate smoky notes. The whisky’s clean, refreshing finish also helps cleanse the palate between bites, making each sip feel as enjoyable as the first.

Even the accompanying ginger chilli adds another dimension of warmth that enhances Toki Suntory Whisky’s spice and freshness without overshadowing its delicate fruit character. As with any pairing, balance is key, so I would go easy on the chilli to allow both the food and the whisky to shine together.
